Originating in Scotland and popular throughout the world, they were first developed in 1839 by two Scottish doctors to aid digestion. The term “digestive” is derived from the belief that they had antacid properties due to the initial use of sodium bicarbonate.

Historically, some cookie makers used malt extract to “digest” some of the starch in the flour before baking.

Steps :

  • Preheat the oven in static mode to 360°F.

Dulce de leche (or caramelized milk or milk jam in English) is a confection from Latin America prepared by slowly heating sugar and milk over a period of several hours. It is typically used to top or fill other sweet foods.

  • Let the dough rise during 1 h at room temperature or overnight in the refrigerator.
  • Place the ball of dough on a slightly floured work surface and spread it on 0.4 inch thick.
  • Detail the donuts with a special or round cookie cutter, forgetting to make the hole in the middle.
  • Leave to rest on a lightly floured tea towel for 1 hour at room temperature or 25 min in the oven at 85° F so that they double in size.
  • Heat the oil in a large saucepan to 350° F.
  • Cook the donuts 45 sec on each side.
