10 MINUTE ZUCCHINI HUMMUS

10 minute zucchini hummus  is a salted preparation based on zucchini, chickpeas, tahini, lemon juice, lemon zest, parsley, mint, paprika, salt and pepper.

Easy and quick to prepare, soft and tasty, it is perfect to spread as an aperitif or as a starter.

2 zucchini (medium size)
100 g (0.6 cup) chickpeas
3 tbsp tahini sauce
4 tbsp + 1 tsp lemon juice
1 tbsp grated lemon zest
1 tbsp parsley
1 tsp dried mint
sweet paprika
salt pepper

Steps :

  • Heat a non-stick skillet over medium heat.
  • Cut the zucchini lengthwise into 0.5 inch slices.
  • Grill, 2 to 3 minutes on each side, until tender.
  • Remove from the heat and place on a plate and let cool for 2 to 3 minutes.
  • Place the zucchini in the bowl of a blender with the lemon zest, lemon juice, chickpeas, tagine, paprika, parsley and mint.
  • Mix until you obtain a smooth and homogeneous mixture.
  • Salt and pepper.
  • Transfer to a bowl and add chopped fresh parsley.
  • Serve and enjoy !

15 MINUTE BEEF SAMOSAS

Samosa is a donut native to Central Asia and the Middle East. Triangular in shape, it is made of a thin wheat dough that coats a stuffing traditionally made with vegetables or meat, chili peppers and spices, especially coriander and turmeric.

Samosa has been a popular delicacy in the Indian subcontinent for centuries. It is supposed to come from Central Asia before the 10th century.

The recipe below allows you to make delicious beef Samosas.

4 brick sheets
1 cup ground beef
4 onions
4 carrots
4 cloves of garlic
1/2 tbsp curry
1 tsp ginger powder
1 tbsp sweet soy sauce
1 egg yolk
olive oil

Preparation :

  • In a skillet, brown the onions, garlic cloves and chopped carrots over high heat with a drizzle of olive oil.
  • Add the beef and brown for 2 to 3 minutes.
  • Sprinkle the curry, the ginger then pour the soy sauce.
  • Mix well and cook over low heat for 2 to 3 minutes.
  • Garnish the pastry sheets with stuffing and fold.
  • Glue the last lapel with egg yolk.
  • Cook in a base of frying oil for about 2 minutes on each side.
  • Place on a plate with absorbent paper.
  • Serve hot and enjoy !

GARLIC CREAM (TOUM)

A garlic cream is a sauce made of garlic, salt, olive oil and lemon juice.

Named toum in Arabic countries, close to French aioli, it is a main ingredient in many Lebanese and Middle Eastern recipes. Word toum means “garlic” in Arabic.

Easy and quick to make, soft and tasty, it is ideal to accompany meat and fish dishes.

4 garlic cloves (peeled)
1/2 cup lemon juice
2.5 cups cold vegetable oil
1 tsp salt

Preparation :

  • Peel the garlic cloves.
  • Cut in half and remove the central germ.
  • Place in blender bowl with lemon juice, salt and 1 tbsp of cold water.
  • Mix and work for 2 to 3 minutes until you obtain a creamy mixture.
  • Slowly add the oil, continue to mix and alternate with the lemon juice.
  • Continue for about 10 minutes until the sauce is soft and looks like mayonnaise.
  • Taste and adjust the salt if necessary.
